paella6 free-range chicken thighs , skin on, bone in; plain flour; olive oil; 100 g quality chorizo; 1 onion; 4 cloves of garlic; ½ a bunch of fresh flat-leaf parsley; 6 rashers of higher-welfare pancetta or smoked streaky bacon; 2 litres organic chicken stock; 2 large pinches of saffron; 1 heaped teaspoon smoked paprika; 500 g paella rice; 2 small squid , from sustainable sources, optional; 2 handfuls of fresh or frozen peas; 10 large raw shell-on king prawns , from sustainable sources; 500 g mussels , (cleaned) from sustainable sources, optional; 1 lemon

    Ay ay ay: Jamie Oliver’s paella recipe angers Spanish foodies

    Traditionalists know that you don’t mess with a good thing. On Tuesday, Jamie Oliver published a recipe for his take on paella that made Spaniards see red on Twitter and adopt the hashtag #Paellagate.

    The British celebrity chef broke a cardinal rule in his recipe – he added chorizo to the traditional dish that hails from the Valencia region and comprises meat, shellfish, vegetables and rice. Oliver’s addition of the distinctly-flavoured and seasoned sausage caused a stir among Spanish traditionalists who view the preparation of paella as sacrosanct.

     英国のセレブシェフ、ジェイミー・オリバー(Jamie Oliver)さんが、自分流にアレンジしたパエリアの写真を自身のツイッター(Twitter)に投稿し、「このチョリソーと鶏もも肉が入ったパエリアは最高に美味しい」とコメントしたことをきっかけに、スペインの人々から憤りの声があがっている。




     スペイン料理のセレブシェフ、オマール・アリボイ(Omar Allibhoy)さんは、「ジェイミーみたいな人は料理にちょっとしたアレンジを加えるんだ。今回は『スペイン風の米料理』を『パエリア』と呼んでしまっただけ」と、英夕刊紙イブニング・スタンダード(Evening Standard)上で擁護する発言をしている。
